November 29, 2002 on 4:38 pm | In Main |I made turkey soup today. This makes the third year in a row that I have made soup from the leftovers of the holiday meal. Yesterday, I started with the turkey bones, boiling them to make a stock. I refrigerated the stock overnight, which causes the fat to congeal at the top, making it easy to discard. I used rice instead of noodles, mainly because we had plenty of rice, and I was to lazy to go to the store to get noodles. I used the lessons I had learned from the last two years, and I believe the result was one tasty soup.
